Leek And Cheese Tart

Ingredients

  • 1 9-inch pre-made pie crust
  • 4 large leeks, white and light green parts only, thinly sliced
  • 2 tablespoons butter
  • 1 cup grated Welsh cheddar cheese
  • 4 eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch tart pan and trim any excess crust. Prick the bottom of the crust with a fork and bake for 10 minutes. Remove from the oven and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the sliced leeks and cook until softened, about 8-10 minutes. Season with salt and pepper.
  4. Sprinkle half of the grated cheese over the bottom of the pre-baked pie crust. Spread the cooked leeks over the cheese.
  5. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper. Pour the egg mixture over the leeks and cheese in the tart crust.
  6. Sprinkle the remaining cheese on top of the tart.
  7. Bake the tart for 30-35 minutes, or until the filling is set and the top is golden brown.
  8. Let the tart cool for a few minutes before slicing and serving.
