Leek And Cheese Tart
This Leek and Cheese Tart is a classic Welsh dish that combines the delicate flavor of leeks with the richness of cheese in a buttery pastry crust. It's perfect for a cozy brunch or a light dinner.
Ingredients
- 1 9-inch pre-made pie crust
- 4 large leeks, white and light green parts only, thinly sliced
- 2 tablespoons butter
- 1 cup grated Welsh cheddar cheese
- 4 eggs
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust in a 9-inch tart pan and trim any excess crust. Prick the bottom of the crust with a fork and bake for 10 minutes. Remove from the oven and set aside.
- In a large skillet, melt the butter over medium heat. Add the sliced leeks and cook until softened, about 8-10 minutes. Season with salt and pepper.
- Sprinkle half of the grated cheese over the bottom of the pre-baked pie crust. Spread the cooked leeks over the cheese.
- In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper. Pour the egg mixture over the leeks and cheese in the tart crust.
- Sprinkle the remaining cheese on top of the tart.
- Bake the tart for 30-35 minutes, or until the filling is set and the top is golden brown.
- Let the tart cool for a few minutes before slicing and serving.
