Ingredients

  • 4 large leeks, white and light green parts only, sliced
  • 4 large potatoes, peeled and thinly sliced
  • 2 cups grated Gouda cheese
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Layer half of the sliced leeks and potatoes in a greased baking dish.
  3. Sprinkle half of the cheese over the leeks and potatoes.
  4. Repeat the layers with the remaining leeks, potatoes, and cheese.
  5. In a small bowl, mix the heavy cream, garlic, thyme, salt, and pepper. Pour this mixture over the layers in the baking dish.
  6. Cover the dish with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  8. Let the gratin rest for 10 minutes before serving.
