Leek And Potato Gratin

Ingredients
- 4 large leeks, white and light green parts only, sliced
- 4 large potatoes, peeled and thinly sliced
- 2 cups grated Gouda cheese
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Layer half of the sliced leeks and potatoes in a greased baking dish.
- Sprinkle half of the cheese over the leeks and potatoes.
- Repeat the layers with the remaining leeks, potatoes, and cheese.
- In a small bowl, mix the heavy cream, garlic, thyme, salt, and pepper. Pour this mixture over the layers in the baking dish.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Let the gratin rest for 10 minutes before serving.
