Ingredients
- 2 large eggplants
- 1 lb ground beef
- 1 onion, finely chopped
- 1 bell pepper, diced
- 2 tomatoes, diced

- 1/4 cup chopped green onions
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/4-inch shell. Chop the scooped-out flesh and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon.
- Add the chopped onion, bell pepper, tomatoes, garlic, and chopped eggplant flesh to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
- Stir in the parsley and green onions, and season with salt and pepper to taste.
- Stuff the eggplant shells with the meat and vegetable mixture, pressing down gently to pack the filling.
- Place the stuffed eggplants in a baking dish and bake for 30-35 minutes, until the eggplants are tender.
