Ingredients

  • 2 large eggplants
  • 1 lb ground beef

  • 2 garlic cloves, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped green onions
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/4-inch shell. Chop the scooped-out flesh and set aside.
  3. In a large skillet, heat the vegetable oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon.
  4. Add the chopped onion, bell pepper, tomatoes, garlic, and chopped eggplant flesh to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
  5. Stir in the parsley and green onions, and season with salt and pepper to taste.
  6. Stuff the eggplant shells with the meat and vegetable mixture, pressing down gently to pack the filling.
  7. Place the stuffed eggplants in a baking dish and bake for 30-35 minutes, until the eggplants are tender.
