Lemon and Thyme Roasted Chicken (Pollo Asado con Limón y Tomillo)

Ingredients

  • 1 whole chicken, about 4 lbs
  • 2 lemons, juiced and zested
  • 3-4 cloves of garlic, minced
  • 2 tablespoons fresh thyme leaves
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix the lemon juice, lemon zest, minced garlic, thyme leaves, and olive oil to create the marinade.
  3. Pat the chicken dry with paper towels and season the cavity with salt and pepper.
  4. Place the chicken in a roasting pan and rub the marinade all over the chicken, including under the skin.
  5. Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
  6. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  7. Let the chicken rest for 10 minutes before carving. Serve with roasted vegetables or a fresh salad.
