Ingredients
- 1 whole chicken, about 4 lbs
- 2 lemons, juiced and zested
- 3-4 cloves of garlic, minced
- 2 tablespoons fresh thyme leaves
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix the lemon juice, lemon zest, minced garlic, thyme leaves, and olive oil to create the marinade.
- Pat the chicken dry with paper towels and season the cavity with salt and pepper.
- Place the chicken in a roasting pan and rub the marinade all over the chicken, including under the skin.
- Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
- Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
- Let the chicken rest for 10 minutes before carving. Serve with roasted vegetables or a fresh salad.
