Lemon Drizzle Cake Extravaganza

Ingredients

  • 200g unsalted butter, softened
  • 200g caster sugar
  • 3 large eggs
  • 200g self-raising flour
  • Zest of 2 lemons
  • 4 tbsp lemon juice
  • 100g granulated sugar

Instructions

  1. Preheat the oven to 180°C and grease a loaf tin.
  2. Cream together the butter and caster sugar until light and fluffy.
  3. Beat in the eggs, one at a time, adding a spoonful of flour with each egg.
  4. Fold in the remaining flour and lemon zest, then spoon the mixture into the tin.
  5. Bake for 35-40 minutes until golden and a skewer inserted into the center comes out clean.
  6. While the cake is still warm, mix the lemon juice and granulated sugar to make the drizzle, then pour it over the cake.
  7. Leave to cool in the tin before turning out onto a wire rack to cool completely.
