Ingredients
- 200g unsalted butter, softened
- 200g caster sugar
- 3 large eggs
- 200g self-raising flour
- Zest of 2 lemons
- 4 tbsp lemon juice
- 100g granulated sugar
Instructions
- Preheat the oven to 180°C and grease a loaf tin.
- Cream together the butter and caster sugar until light and fluffy.
- Beat in the eggs, one at a time, adding a spoonful of flour with each egg.
- Fold in the remaining flour and lemon zest, then spoon the mixture into the tin.
- Bake for 35-40 minutes until golden and a skewer inserted into the center comes out clean.
- While the cake is still warm, mix the lemon juice and granulated sugar to make the drizzle, then pour it over the cake.
- Leave to cool in the tin before turning out onto a wire rack to cool completely.
