Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/4 cup soy sauce
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the shrimp and season with salt and pepper. Cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
- Heat the remaining 1 tablespoon of olive oil in the same skillet. Add the garlic and ginger, and sauté for 1 minute until fragrant.
- Add the sliced bell peppers and cook for 2-3 minutes until slightly tender.
- Return the cooked shrimp to the skillet. Pour in the soy sauce, lemon juice, and lemon zest. Stir-fry for an additional 2 minutes.
