Lemon Lasagna

Ingredients

  • 1 package of graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup freshly squeezed lemon juice

  • 16 oz mascarpone cheese
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar

Instructions

  1. In a food processor, pulse the graham crackers into fine crumbs. Add melted butter and pulse until combined. Press the mixture into the bottom of a 9x13 inch dish to form the crust.
  2. In a large bowl, beat the mascarpone cheese and granulated sugar until smooth. Gradually add the lemon juice and lemon zest, mixing until well combined.
  3. In a separate bowl, whip the heavy cream, vanilla extract, and powdered sugar until stiff peaks form.
  4. Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
  5. Spoon half of the mascarpone mixture over the graham cracker crust and spread it evenly. Repeat with another layer of graham crackers and the remaining mascarpone mixture.
  6. Refrigerate the lemon lasagna for at least 4 hours or overnight to set before serving.
