Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon zest and lemon juice.
  4. Gradually mix in the dry ingredients alternately with the milk. Pour the batter into the prepared loaf pan.
  5. Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
  6. While the loaf is baking, mix the powdered sugar and 2 tablespoons of lemon juice. Once the loaf is done, remove it from the oven and immediately pour the lemon-sugar mixture over the hot loaf.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
