Lemon Loaf

Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 2 tablespoons lemon zest
- 1/4 cup fresh lemon juice
- 1 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lemon zest and lemon juice.
- Gradually mix in the dry ingredients alternately with the milk. Pour the batter into the prepared loaf pan.
- Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
- While the loaf is baking, mix the powdered sugar and 2 tablespoons of lemon juice. Once the loaf is done, remove it from the oven and immediately pour the lemon-sugar mixture over the hot loaf.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
