Lemon Ricotta Ravioli

Ingredients

  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 package of store-bought wonton wrappers
  • 1/4 cup unsalted butter
  • Fresh basil for garnish

Instructions

  1. In a bowl, mix the ricotta cheese, Parmesan cheese, egg, lemon zest, lemon juice, salt, and pepper.
  2. Place a small spoonful of the ricotta mixture onto a wonton wrapper. Moisten the edges with water and place another wrapper on top, pressing to seal.
  3. In a large pot of boiling salted water, cook the ravioli for 2-3 minutes, or until they float to the surface.
  4. In a separate pan, melt the butter over medium heat until it begins to brown. Remove from heat.
  5. Drain the ravioli and toss them in the browned butter.
