Lemon Souffles

Ingredients
- 4 eggs, separated
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup milk
- 1/4 teaspoon cream of tartar
- Confectioners' sugar, for dusting
Instructions
- Preheat the oven to 375°F (190°C). Butter and sugar four 6-ounce ramekins.
- In a saucepan, whisk together the granulated sugar, flour, lemon juice, lemon zest, and milk. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool slightly.
- In a large bowl, beat the egg yolks. Gradually add the lemon mixture to the egg yolks, whisking constantly. Set aside.
- In another large bowl, beat the egg whites and cream of tartar until stiff peaks form. Gently fold the egg whites into the lemon mixture until fully combined.
- Pour the mixture into the prepared ramekins and smooth the tops with a spatula. Place the ramekins on a baking sheet and bake for 12-15 minutes, or until the souffles are puffed and golden.
- Dust the tops with confectioners' sugar and serve immediately.
