Ingredients

  • 4 eggs, separated
  • 1/2 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup milk
  • 1/4 teaspoon cream of tartar
  • Confectioners' sugar, for dusting

Instructions

  1. Preheat the oven to 375°F (190°C). Butter and sugar four 6-ounce ramekins.
  2. In a saucepan, whisk together the granulated sugar, flour, lemon juice, lemon zest, and milk. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let it cool slightly.
  3. In a large bowl, beat the egg yolks. Gradually add the lemon mixture to the egg yolks, whisking constantly. Set aside.
  4. In another large bowl, beat the egg whites and cream of tartar until stiff peaks form. Gently fold the egg whites into the lemon mixture until fully combined.
  5. Pour the mixture into the prepared ramekins and smooth the tops with a spatula. Place the ramekins on a baking sheet and bake for 12-15 minutes, or until the souffles are puffed and golden.
  6. Dust the tops with confectioners' sugar and serve immediately.
