Gai Sa-oon, also known as Lemongrass Chicken, is a popular dish in Lao Cuisine. This flavorful and aromatic dish is made with tender chicken marinated in lemongrass, garlic, and other fragrant herbs, then grilled or stir-fried to perfection.

Lemongrass Chicken (Gai Sa-oon)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 stalks lemongrass, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1 teaspoon ground black pepper
  • 1 teaspoon red chili flakes (optional)
  • 1 lime, juiced
  • Chopped cilantro, for garnish

Instructions

  1. In a bowl, combine lemongrass, garlic, fish sauce, soy sauce, honey, vegetable oil, black pepper, chili flakes, and lime juice to make the marinade.
  2. Add the chicken breasts to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Heat a grill or stovetop pan over medium-high heat. Cook the chicken for 6-7 minutes on each side, or until fully cooked and nicely charred.
  4. Remove the chicken from the grill or pan and let it rest for a few minutes before slicing.
  5. Garnish with chopped cilantro and serve hot with steamed rice or salad.
