Ingredients

  • 1 block of firm tofu, drained and crumbled
  • 2 tablespoons lemongrass, finely chopped
  • 1 tablespoon lime zest
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon agave nectar
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup roasted peanuts, chopped
  • 1 head of butter lettuce, leaves separated

Instructions

  1. In a bowl, mix the crumbled tofu, lemongrass, lime zest, lime juice, garlic, soy sauce, sesame oil, and agave nectar until well combined.
  2. Heat a skillet over medium heat and add the tofu mixture. Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly browned.
