Ingredients
- 1 block of firm tofu, drained and pressed
- 2 stalks of lemongrass, finely chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 tablespoon of soy sauce
- 1 teaspoon of ground cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 8 small tortillas
- 1 tablespoon of vegetable oil
Instructions
- Heat the vegetable oil in a pan over medium heat.
- Add the diced onion, minced garlic, and chopped lemongrass to the pan and sauté until fragrant.
- Crumble the pressed tofu into the pan and stir to combine with the onion and lemongrass mixture.
- Add the sliced red bell pepper, soy sauce, ground cumin, paprika, salt, and pepper to the pan. Cook for 5-7 minutes, stirring occasionally.
- Warm the tortillas in a separate pan or in the microwave.
- Divide the tofu mixture among the tortillas and serve hot.
