Lentil and Chickpea Salad (Буьйраш)
Буьйраш (Lentil and Chickpea Salad) is a traditional dish from Chechen cuisine that is packed with protein and flavor. This salad is perfect for a light and nutritious meal.
Ingredients
- 1 cup lentils, rinsed
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a pot, bring 3 cups of water to a boil. Add the lentils and cook for 15-20 minutes until tender. Drain and let cool.
- In a large bowl, combine the cooked lentils, chickpeas, red bell pepper, cucumber, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
