Lentil and Chickpea Salad (Буьйраш)

Ingredients

  • 1 cup lentils, rinsed
  • 1 can chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a pot, bring 3 cups of water to a boil. Add the lentils and cook for 15-20 minutes until tender. Drain and let cool.
  2. In a large bowl, combine the cooked lentils, chickpeas, red bell pepper, cucumber, red onion, and parsley.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.
  4. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
