Lentil and Feta Salad (Буьйраш)

Ingredients

  • 1 cup green or brown lentils, rinsed
  • 3 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped red onion

Instructions

  1. In a medium saucepan, combine the lentils, water, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender but not mushy. Drain any excess water.
  2. In a large bowl, whisk together the olive oil and red wine vinegar. Add the cooked lentils, feta cheese, parsley, and red onion. Toss gently to combine.
  3. Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
