Буьйраш (Lentil and Feta Salad) is a traditional dish from Chechen cuisine that combines the earthy flavors of lentils with the tangy taste of feta cheese, creating a refreshing and nutritious salad.
Ingredients
- 1 cup green or brown lentils, rinsed
- 3 cups water
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped red onion
Instructions
- In a medium saucepan, combine the lentils, water, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the lentils are tender but not mushy. Drain any excess water.
- In a large bowl, whisk together the olive oil and red wine vinegar. Add the cooked lentils, feta cheese, parsley, and red onion. Toss gently to combine.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
