Lentil and Potato Pasta (Misir Firfir Be'kosta Firfir)

Ingredients
- 1 cup red lentils
- 2 potatoes, diced
- 8 oz pasta
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the diced potatoes, lentils, cumin, paprika, and turmeric to the pot. Stir to combine.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 15 minutes.
- Add the pasta to the pot and cook for an additional 10-12 minutes, or until the pasta is tender.
- Season with salt and pepper to taste.
