Lentil and Potato Stew (Misir Firfir Be'kosta)

Ingredients

  • 1 cup red lentils
  • 2 large potatoes, peeled and diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
