Ingredients
- 1 cup red lentils
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1/2 teaspoon paprika
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Stir in the cumin, turmeric, and paprika, and cook for another minute to toast the spices.
- Add the red lentils, diced potatoes, and vegetable broth to the pot. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the lentils and potatoes are tender.
