Lentil and Rice Soup (Shorba Bil-Adas)

Ingredients

  • 1 cup red lentils, rinsed
  • 1/2 cup rice
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, ground cumin, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Add the rinsed red lentils, rice, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils and rice are tender.
  4. Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
