Lentil and Rice Soup (Shorba Bil-Adas)
Shorba Bil-Adas, or Lentil and Rice Soup, is a popular dish in Libyan cuisine. This hearty and comforting soup is packed with protein and fiber, making it a nutritious and satisfying meal.
Ingredients
- 1 cup red lentils, rinsed
- 1/2 cup rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 6 cups vegetable broth
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground cumin, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the rinsed red lentils, rice, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils and rice are tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro.
