Lentil and Spinach Pasta (Yemiser Be'selenge Firfir)

Ingredients
- 1 cup red lentils, rinsed
- 8 oz spinach, chopped
- 8 oz pasta of your choice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp olive oil
- 4 cups vegetable broth
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Stir in the cumin, paprika, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the lentils are tender.
- While the lentils are cooking, prepare the pasta according to the package instructions. Drain and set aside.
- Once the lentils are tender, stir in the chopped spinach and cooked pasta. Cook for an additional 3-5 minutes until the spinach wilts.
- Season with salt and pepper to taste. Serve the Yemiser Be'selenge Firfir warm and enjoy!
