Lentil and Spinach Pasta (Yemiser Be'selenge Firfir)

Ingredients

  • 1 cup red lentils, rinsed
  • 8 oz spinach, chopped
  • 8 oz pasta of your choice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 4 cups vegetable broth

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Stir in the cumin, paprika, turmeric, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  3. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the lentils are tender.
  4. While the lentils are cooking, prepare the pasta according to the package instructions. Drain and set aside.
  5. Once the lentils are tender, stir in the chopped spinach and cooked pasta. Cook for an additional 3-5 minutes until the spinach wilts.
  6. Season with salt and pepper to taste. Serve the Yemiser Be'selenge Firfir warm and enjoy!
