Lentil and Vegetable Curry (Bazin Bil-Khudar)

Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the diced carrots and potatoes to the pot, and cook for 5 minutes, stirring occasionally.
- Stir in the ground cumin, coriander, turmeric, and paprika, and cook for another 2 minutes to toast the spices.
- Add the dried lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils and vegetables are tender.
- Season the Bazin Bil-Khudar with salt and pepper to taste. Serve hot and enjoy!
