Lentil and Vegetable Curry (Bazin Bil-Khudar)

Ingredients

  • 1 cup dried lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the diced carrots and potatoes to the pot, and cook for 5 minutes, stirring occasionally.
  3. Stir in the ground cumin, coriander, turmeric, and paprika, and cook for another 2 minutes to toast the spices.
  4. Add the dried lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils and vegetables are tender.
  5. Season the Bazin Bil-Khudar with salt and pepper to taste. Serve hot and enjoy!
