Lentil and Vegetable Curry (Mooré)
Mooré is a delicious Mauritanian lentil and vegetable curry that is packed with flavor and nutrition. This hearty dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 1 cup dried lentils
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 2 carrots, diced
- 1 zucchini, diced
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the cumin, coriander, turmeric, and paprika to the pot, and stir for 1 minute to toast the spices.
- Pour in the diced tomatoes and vegetable broth, then add the lentils. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
- Add the carrots and zucchini to the pot, and continue to simmer for an additional 15-20 minutes, or until the lentils and vegetables are tender.
- Season with salt and pepper to taste.
- Serve the Mooré hot, accompanied by rice or bread.
