Lentil and Vegetable Curry (Mooré)

Ingredients

  • 1 cup dried lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 2 carrots, diced
  • 1 zucchini, diced
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the cumin, coriander, turmeric, and paprika to the pot, and stir for 1 minute to toast the spices.
  4. Pour in the diced tomatoes and vegetable broth, then add the lentils. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
  5. Add the carrots and zucchini to the pot, and continue to simmer for an additional 15-20 minutes, or until the lentils and vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve the Mooré hot, accompanied by rice or bread.
