Lentil And Vegetable Samosas

Ingredients

  • 1 cup red lentils
  • 2 potatoes, peeled and diced
  • 1 onion, finely chopped
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • Salt to taste
  • Pepper to taste
  • 2 tbsp vegetable oil
  • 12 sheets of phyllo pastry
  • Water for sealing the samosas
  • Oil for frying

Instructions

  1. In a large pot, cook the lentils according to package instructions. Drain and set aside.
  2. In a separate pan, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they start to sizzle.
  3. Add the chopped onion and garlic to the pan and cook until the onion is soft and translucent.
  4. Add the diced potatoes, frozen peas, ground coriander, garam masala, turmeric, salt, and pepper to the pan. Cook for 10-12 minutes, or until the potatoes are tender.
  5. Stir in the cooked lentils and mix well. Remove from heat and let the mixture cool.
  6. Preheat the oven to 375°F (190°C).
  7. Take one sheet of phyllo pastry and cut it in half lengthwise. Place a spoonful of the lentil and vegetable mixture at one end of each strip.
  8. Fold the pastry over the filling to form a triangle, then continue folding up the strip to create a triangular parcel. Use water to seal the edges.
  9. Repeat with the remaining pastry and filling.
  10. Place the samosas on a baking sheet and brush with oil. Bake for 20-25 minutes, or until golden and crispy.
  11. Serve the samosas hot with chutney or dipping sauce of your choice.
