Lentil And Vegetable Samosas
Samosas are a popular snack in Anglo-Indian cuisine, and this recipe for Lentil and Vegetable Samosas is a delicious and savory treat. Filled with a flavorful mixture of lentils and vegetables, these samosas are perfect for serving as an appetizer or snack.
Ingredients
- 1 cup red lentils
- 2 potatoes, peeled and diced
- 1 onion, finely chopped
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp ground coriander
- 1 tsp garam masala
- 1/2 tsp turmeric
- Salt to taste
- Pepper to taste
- 2 tbsp vegetable oil
- 12 sheets of phyllo pastry
- Water for sealing the samosas
- Oil for frying
Instructions
- In a large pot, cook the lentils according to package instructions. Drain and set aside.
- In a separate pan, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they start to sizzle.
- Add the chopped onion and garlic to the pan and cook until the onion is soft and translucent.
- Add the diced potatoes, frozen peas, ground coriander, garam masala, turmeric, salt, and pepper to the pan. Cook for 10-12 minutes, or until the potatoes are tender.
- Stir in the cooked lentils and mix well. Remove from heat and let the mixture cool.
- Preheat the oven to 375°F (190°C).
- Take one sheet of phyllo pastry and cut it in half lengthwise. Place a spoonful of the lentil and vegetable mixture at one end of each strip.
- Fold the pastry over the filling to form a triangle, then continue folding up the strip to create a triangular parcel. Use water to seal the edges.
- Repeat with the remaining pastry and filling.
- Place the samosas on a baking sheet and brush with oil. Bake for 20-25 minutes, or until golden and crispy.
- Serve the samosas hot with chutney or dipping sauce of your choice.
