Lentil Salad (Ensalada de Lentejas) is a classic dish in Uruguayan cuisine, known for its delicious flavors and nutritious ingredients.
Ingredients
- 2 cups of lentils
- 1 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- 3 tablespoons of red wine vinegar
- Salt and pepper to taste
Instructions
- Rinse the lentils and place them in a pot with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender. Drain and let cool.
- In a large bowl, combine the cooked lentils, red onion, red bell pepper, and parsley.
