Ingredients
- 1 cup green lentils
- 1 red onion, finely chopped
- 2 carrots, grated
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the lentils and cook them in a pot of boiling water for about 15-20 minutes, or until tender. Drain and let cool.
- In a large bowl, combine the cooked lentils, chopped red onion, grated carrots, and chopped parsley.
