Ingredients
- 1 cup green or brown lentils, rinsed
- 2 cups vegetable broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced

- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat.

- Add the minced garlic, thyme, and paprika. Cook for another 2 minutes.
- Add the rinsed lentils and vegetable broth to the skillet. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
