Lentil Soup (Ciorbă de Linte)
Ciorbă de Linte is a traditional Romanian lentil soup that is both hearty and flavorful. This nutritious soup is a staple in Romanian cuisine and is perfect for a cozy meal on a cold day.
Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 bay leaf
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon apple cider vinegar
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are softened, about 5 minutes.
- Add the garlic, paprika, and bay leaf to the pot, and cook for an additional 2 minutes.
- Pour in the vegetable broth and add the lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
- Stir in the apple cider vinegar and season with salt and pepper to taste.
- Remove the bay leaf and discard. Serve the soup hot, garnished with fresh parsley.
