Lentil Soup (Ciorbă de Linte)

Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon apple cider vinegar

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are softened, about 5 minutes.
  3. Add the garlic, paprika, and bay leaf to the pot, and cook for an additional 2 minutes.
  4. Pour in the vegetable broth and add the lentils. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the lentils are tender.
  5. Stir in the apple cider vinegar and season with salt and pepper to taste.
  6. Remove the bay leaf and discard. Serve the soup hot, garnished with fresh parsley.
