Lentil Soup with Smoked Sausage (Šošovicová polievka s údenou klobásou)

Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 pound smoked sausage, sliced

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, sauté the onion, carrots, and celery until softened.
  3. Add the garlic and cook for another minute.
  4. Pour in the broth, add the lentils, thyme, bay leaf, salt, and pepper.
  5. Simmer for 45 minutes, or until the lentils are tender.
  6. Add the sliced smoked sausage and cook for an additional 10 minutes.
  7. Remove the bay leaf and adjust the seasoning if needed.
  8. Serve hot and enjoy!
