Šošovicová polievka s údenou klobásou, or Lentil Soup with Smoked Sausage, is a traditional Slovak dish that is hearty, flavorful, and perfect for a cozy meal on a cold day.
Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 pound smoked sausage, sliced
Instructions
- Rinse the lentils and set aside.
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Pour in the broth, add the lentils, thyme, bay leaf, salt, and pepper.
- Simmer for 45 minutes, or until the lentils are tender.
- Add the sliced smoked sausage and cook for an additional 10 minutes.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve hot and enjoy!
