Lentil Stew (udupi Sambar)
Lentil Stew, also known as Udupi Sambar, is a traditional dish from Karnataka Cuisine that is packed with flavors and nutritious ingredients. This hearty stew is perfect for a comforting meal, and it's easy to make at home.
Ingredients
- 1 cup split pigeon peas (toor dal)
- 2 cups mixed vegetables (carrots, beans, eggplant, drumsticks)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 green chili, slit
- 1/2 teaspoon turmeric powder
- 1 tablespoon tamarind paste
- 2 tablespoons sambar powder
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A few curry leaves
- 2 tablespoons oil
- Salt to taste
Instructions
- Wash the toor dal and pressure cook with 3 cups of water until soft.
- Add the mixed vegetables, chopped onion, tomatoes, green chili, turmeric powder, and salt to the cooked dal. Cook until the vegetables are tender.
- Add tamarind paste and sambar powder. Simmer for 10 minutes.
- Heat oil in a separate pan, add mustard seeds, cumin seeds, and curry leaves. Once the seeds splutter, pour this tempering over the sambar.
- Stir well and simmer for a few more minutes. Serve hot with rice or idli.
