Lentil Stew (udupi Sambar)

Ingredients

  • 1 cup split pigeon peas (toor dal)
  • 2 cups mixed vegetables (carrots, beans, eggplant, drumsticks)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 green chili, slit
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon tamarind paste
  • 2 tablespoons sambar powder
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A few curry leaves
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Wash the toor dal and pressure cook with 3 cups of water until soft.
  2. Add the mixed vegetables, chopped onion, tomatoes, green chili, turmeric powder, and salt to the cooked dal. Cook until the vegetables are tender.
  3. Add tamarind paste and sambar powder. Simmer for 10 minutes.
  4. Heat oil in a separate pan, add mustard seeds, cumin seeds, and curry leaves. Once the seeds splutter, pour this tempering over the sambar.
  5. Stir well and simmer for a few more minutes. Serve hot with rice or idli.
