Lentil Tofu
Lentil tofu is a delicious and nutritious dish that combines the earthy flavors of lentils with the protein-packed goodness of tofu. This recipe is perfect for a healthy and satisfying meal.
Ingredients
- 1 cup dried lentils
- 1 block firm tofu, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cups vegetable broth
Instructions
- Rinse the lentils and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the spices and stir for 1 minute to toast them.
- Add the lentils, tofu, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve the lentil tofu hot, garnished with fresh herbs if desired.
