Lentil Tofu

Ingredients

  • 1 cup dried lentils
  • 1 block firm tofu, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups vegetable broth

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the spices and stir for 1 minute to toast them.
  4. Add the lentils, tofu, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste.
  6. Serve the lentil tofu hot, garnished with fresh herbs if desired.
