Lentils With Spaetzle (linsen Mit Spätzle)
Lentils with Spaetzle (Linsen mit Spätzle) is a traditional dish from Swabian cuisine, known for its hearty and comforting flavors. This dish combines the earthy taste of lentils with the soft and chewy texture of homemade spaetzle, creating a satisfying meal that is perfect for any occasion.
Ingredients
- 1 cup dried lentils
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup all-purpose flour
- 2 eggs
- 1/4 cup water
Instructions
- Rinse the lentils under cold water and drain.
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the lentils, vegetable broth, salt, pepper, and thyme to the pot. Bring to a boil, then reduce heat and simmer for 45-50 minutes, or until the lentils are tender.
- While the lentils are cooking, prepare the spaetzle. In a bowl, mix the flour, eggs, and water to form a smooth, thick batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes into the boiling water, creating small dumplings.
- Cook the spaetzle for 2-3 minutes, then drain and rinse with cold water.
- Serve the cooked spaetzle with the lentils, and enjoy!
