Ingredients

  • 1 botillo sausage
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon sweet paprika
  • Salt and pepper to taste
  • Water

Instructions

  1. Place the botillo sausage in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours.
  2. Add the diced potatoes, chopped onion, minced garlic, bay leaf, and sweet paprika to the pot. Season with salt and pepper.
  3. Continue to simmer for an additional 1 hour, or until the potatoes are tender and the flavors have melded together.
  4. Remove the botillo from the pot and slice into thick pieces. Serve the botillo and vegetables hot, with crusty bread on the side.
