Leonese Botillo (Botillo Leonés)
Botillo Leonés is a traditional cured meat dish from the province of León in Spain. It is a flavorful and hearty dish that is perfect for sharing with family and friends.
Ingredients
- 1 botillo sausage
- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 bay leaf
- 1 teaspoon sweet paprika
- Salt and pepper to taste

Instructions
- Place the botillo sausage in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours.
- Add the diced potatoes, chopped onion, minced garlic, bay leaf, and sweet paprika to the pot. Season with salt and pepper.
- Continue to simmer for an additional 1 hour, or until the potatoes are tender and the flavors have melded together.
- Remove the botillo from the pot and slice into thick pieces. Serve the botillo and vegetables hot, with crusty bread on the side.
