Leonese-style Beef Stew (Estofado de Ternera Estilo Leonés)
Estofado de Ternera Estilo Leonés, or Leonese-style Beef Stew, is a traditional dish from the region of León in Spain. This hearty and flavorful stew is perfect for a cozy family meal, especially during the colder months. The combination of tender beef, aromatic vegetables, and rich sauce makes it a comforting and satisfying dish.
Ingredients
- 2 lbs (900g) beef stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 red bell pepper, diced
- 1 cup (240ml) red wine
- 2 cups (480ml) beef broth
- 1 can (14 oz/400g) diced tomatoes
- 2 bay leaves
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Season the beef chunks with salt and pepper.
- In a large pot, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- Lower the heat to medium and add the onion and garlic to the pot. Sauté until the onion is translucent.
- Add the carrots, celery, and red bell pepper. Cook for a few minutes until the vegetables start to soften.
- Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow the wine to simmer for a couple of minutes.
- Return the beef to the pot and add the beef broth, diced tomatoes, bay leaves, and paprika. Stir to combine.
- Bring the stew to a simmer, then reduce the heat to low. Cover and let it cook for about 2 hours, or until the beef is tender.
- Adjust the seasoning with salt and pepper, if needed.
- Discard the bay leaves before serving.
