Leonese-style Beef Stew (Estofado de Ternera Estilo Leonés)

Ingredients

  • 2 lbs (900g) beef stew meat, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, diced
  • 1 cup (240ml) red wine
  • 2 cups (480ml) beef broth
  • 1 can (14 oz/400g) diced tomatoes
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Season the beef chunks with salt and pepper.
  2. In a large pot, heat the olive oil over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  3. Lower the heat to medium and add the onion and garlic to the pot. Sauté until the onion is translucent.
  4. Add the carrots, celery, and red bell pepper. Cook for a few minutes until the vegetables start to soften.
  5. Pour in the red wine and scrape the bottom of the pot to release any browned bits. Allow the wine to simmer for a couple of minutes.
  6. Return the beef to the pot and add the beef broth, diced tomatoes, bay leaves, and paprika. Stir to combine.
  7. Bring the stew to a simmer, then reduce the heat to low. Cover and let it cook for about 2 hours, or until the beef is tender.
  8. Adjust the seasoning with salt and pepper, if needed.
  9. Discard the bay leaves before serving.
