Ingredients

Instructions
- In a saucepan, heat the milk until steaming but not boiling.
- In another saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk the warm milk into the roux, stirring constantly until the mixture thickens to a smooth, creamy sauce.
- Remove the sauce from the heat and stir in the grated cheese until melted and well combined. Season with salt and pepper to taste.
- Spread the cheese mixture onto a shallow dish and refrigerate for at least 2 hours, or until firm.
- Once the cheese mixture is firm, use a spoon to scoop out portions and shape them into small cylinders or balls.
- Dip each croquette into the beaten eggs, then coat with breadcrumbs, ensuring they are fully covered.
- In a deep skillet, heat the vegetable oil over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 2-3 minutes per batch.
- Remove the croquettes from the oil and place them on a paper towel-lined plate to drain any excess oil.
- Serve the croquettes hot and enjoy!
