Leonese-style Honey Flan (Flan de Miel a la Leonés)

Ingredients

  • 6 large eggs
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups whole milk
  • 1/2 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, heat the honey over low heat until it becomes liquid.
  2. In a mixing bowl, whisk the eggs and then add the sweetened condensed milk, whole milk, and vanilla extract. Mix well.
  3. Slowly pour the warm honey into the egg mixture while continuously whisking to combine.
  4. Strain the mixture through a fine-mesh sieve to remove any lumps.
  5. Preheat the oven to 350°F (175°C).
  6. Pour the mixture into a flan mold or individual ramekins.
  7. Place the flan mold or ramekins in a large baking dish and fill the dish with hot water until it reaches halfway up the sides of the mold or ramekins.
  8. Bake in the preheated oven for 45 minutes, or until the flan is set but still slightly jiggly in the center.
  9. Remove from the oven and let the flan cool to room temperature. Then, refrigerate for at least 4 hours or overnight.
  10. To serve, run a knife around the edges of the flan and invert it onto a serving plate.
