Ingredients
- 8 flour tortillas
- 2 cups sliced mushrooms
- 2 cups shredded cheese (such as mozzarella or Oaxaca cheese)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the sliced mushrooms and sauté for 5-7 minutes until they are golden brown. Season with salt and pepper to taste.
- Remove the mushrooms from the skillet and set aside.
- Wipe the skillet clean and return it to the heat. Brush one side of a flour tortilla with olive oil and place it oiled-side down in the skillet.
- Sprinkle a layer of shredded cheese on half of the tortilla, then top with a layer of sautéed mushrooms.
- Fold the tortilla in half to cover the filling, then cook for 2-3 minutes on each side until the cheese is melted and the tortilla is golden and crispy.
- Repeat with the remaining tortillas, cheese, and mushrooms.
- Slice the quesadillas into wedges and serve hot.
