Leonese-style Mushroom and Cheese Quesadillas (Quesadillas de Setas y Queso a la Leonés)

Ingredients

  • 8 flour tortillas
  • 2 cups sliced mushrooms
  • 2 cups shredded cheese (such as mozzarella or Oaxaca cheese)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the sliced mushrooms and sauté for 5-7 minutes until they are golden brown. Season with salt and pepper to taste.
  3. Remove the mushrooms from the skillet and set aside.
  4. Wipe the skillet clean and return it to the heat. Brush one side of a flour tortilla with olive oil and place it oiled-side down in the skillet.
  5. Sprinkle a layer of shredded cheese on half of the tortilla, then top with a layer of sautéed mushrooms.
  6. Fold the tortilla in half to cover the filling, then cook for 2-3 minutes on each side until the cheese is melted and the tortilla is golden and crispy.
  7. Repeat with the remaining tortillas, cheese, and mushrooms.
  8. Slice the quesadillas into wedges and serve hot.
