Ingredients
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1 cup milk
- 1 cup finely chopped mushrooms
- 1/2 cup finely chopped ham
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
Instructions
- Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
- Gradually whisk in the milk until smooth and thickened to make a béchamel sauce.
- Stir in the chopped mushrooms, ham, nutmeg, salt, and pepper. Cook for 5-7 minutes until the mixture is thick and creamy.
- Transfer the mixture to a shallow dish and refrigerate for 2 hours until firm.
- Shape the chilled mixture into small croquettes. Dip each croquette into the beaten eggs, then coat with breadcrumbs.
- Heat the vegetable oil in a deep pan over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch.
- Remove the croquettes from the oil and drain on paper towels. Serve hot and enjoy!
