Ingredients

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 1 cup finely chopped mushrooms
  • 1/2 cup finely chopped ham
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying

Instructions

  1. Melt the butter in a saucepan over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  2. Gradually whisk in the milk until smooth and thickened to make a béchamel sauce.
  3. Stir in the chopped mushrooms, ham, nutmeg, salt, and pepper. Cook for 5-7 minutes until the mixture is thick and creamy.
  4. Transfer the mixture to a shallow dish and refrigerate for 2 hours until firm.
  5. Shape the chilled mixture into small croquettes. Dip each croquette into the beaten eggs, then coat with breadcrumbs.
  6. Heat the vegetable oil in a deep pan over medium-high heat. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per batch.
  7. Remove the croquettes from the oil and drain on paper towels. Serve hot and enjoy!
