Ingredients

Instructions
- In a paella pan or large skillet, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the red bell pepper, tomato, smoked paprika, and saffron threads. Cook for a few minutes until the vegetables are tender.
- Add the rice to the pan and stir to coat it with the vegetable mixture.
- Pour in the seafood or chicken broth and bring to a simmer. Cook for about 15-20 minutes, stirring occasionally, until the rice is almost tender and most of the liquid is absorbed.
- Gently nestle the mixed seafood into the rice, cover the pan, and cook for an additional 10 minutes or until the seafood is cooked through.
- Season with salt and pepper to taste.
- Remove from heat and let the paella rest for a few minutes before serving with lemon wedges.
