Ingredients

  • 4 large artichokes
  • 1 cup breadcrumbs
  • 1/2 cup grated cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the tops.
  2. In a bowl, mix the breadcrumbs, cheese, garlic, parsley, and olive oil. Season with salt and pepper.
  3. Stuff the artichokes with the breadcrumb mixture, pressing it firmly into the center and between the leaves.
  4. Place the stuffed artichokes in a pot, add water until halfway up the artichokes, and simmer for 45 minutes or until tender.
  5. Serve the stuffed artichokes hot, drizzled with a little extra olive oil if desired.
