Alcachofas Rellenas a la Leonés, or Leonese-style Stuffed Artichokes, is a traditional dish from the Leonese cuisine that features tender artichokes stuffed with a flavorful mixture of ingredients.
Ingredients
- 4 large artichokes
- 1 cup breadcrumbs
- 1/2 cup grated cheese
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Prepare the artichokes by removing the tough outer leaves and trimming the tops.
- In a bowl, mix the breadcrumbs, cheese, garlic, parsley, and olive oil. Season with salt and pepper.
- Stuff the artichokes with the breadcrumb mixture, pressing it firmly into the center and between the leaves.
- Place the stuffed artichokes in a pot, add water until halfway up the artichokes, and simmer for 45 minutes or until tender.
- Serve the stuffed artichokes hot, drizzled with a little extra olive oil if desired.
