Ingredients
- 1 head of cabbage
- 1 pound ground beef
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1 can (14 oz) crushed tomatoes
- 2 cups beef or vegetable broth
- 2 tablespoons olive oil
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes, or until they are pliable. Remove and set aside to cool.
- In a bowl, mix the ground beef, uncooked rice, chopped onion, minced garlic, paprika, cumin, salt, and pepper until well combined.
- Place a spoonful of the meat mixture onto each cabbage leaf, then roll them up, tucking in the sides to enclose the filling.
- Heat the olive oil in a large pot over medium heat. Add the stuffed cabbage rolls and cook for 2-3 minutes on each side, or until lightly browned.
- Pour in the crushed tomatoes and beef or vegetable broth. Bring to a simmer, then reduce the heat to low, cover, and cook for 1 hour, or until the cabbage rolls are tender and the filling is cooked through.
- Serve the Leonese-style stuffed cabbage rolls hot, spooning some of the tomato sauce over the top.
