Leonese-style Stuffed Squid (Calamares Rellenos a la Leonés)
Calamares Rellenos a la Leonés, or Leonese-style Stuffed Squid, is a traditional dish from the cuisine of León, a province in the northwest of Spain. This recipe features tender squid stuffed with a flavorful mixture of ingredients, creating a delicious and satisfying dish.
Ingredients
- 4 medium-sized squid
- 1 cup cooked white rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tomato, diced
- 1/4 cup parsley, chopped
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Clean the squid, removing the tentacles and innards. Set aside the tentacles and discard the innards.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the diced tomato, cooked rice, chopped parsley, paprika, salt, and pepper to the skillet. Cook for 5 minutes, then remove from heat.
- Stuff the squid with the rice mixture and secure the openings with toothpicks.
- Heat the remaining olive oil in a large pan over medium heat. Add the stuffed squid and tentacles, and cook for 10-12 minutes, turning occasionally, until the squid is tender and lightly browned.
- Once cooked, remove the toothpicks and serve the stuffed squid hot.
