Leonese-style Stuffed Squid (Calamares Rellenos a la Leonés)

Ingredients

  • 4 medium-sized squid
  • 1 cup cooked white rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup parsley, chopped
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Clean the squid, removing the tentacles and innards. Set aside the tentacles and discard the innards.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the diced tomato, cooked rice, chopped parsley, paprika, salt, and pepper to the skillet. Cook for 5 minutes, then remove from heat.
  4. Stuff the squid with the rice mixture and secure the openings with toothpicks.
  5. Heat the remaining olive oil in a large pan over medium heat. Add the stuffed squid and tentacles, and cook for 10-12 minutes, turning occasionally, until the squid is tender and lightly browned.
  6. Once cooked, remove the toothpicks and serve the stuffed squid hot.
