Leribe Beef And Potato Samosas
Leribe Beef and Potato Samosas are a popular snack in Lesotho, featuring a flavorful filling of beef and potatoes wrapped in a crispy pastry shell. These samosas are perfect for serving as an appetizer or enjoying as a tasty snack.
Ingredients
- 1 lb ground beef
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- Salt and pepper to taste
- 12 sheets of samosa pastry or phyllo dough
- Vegetable oil for frying
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion, garlic, and diced potatoes to the skillet with the beef. Cook for 5-7 minutes, or until the potatoes are tender.
- Stir in the ground cumin, coriander, turmeric, chili powder, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat and let the filling cool.
- Take one sheet of samosa pastry or phyllo dough and place a spoonful of the beef and potato filling in the center. Fold the pastry over the filling to form a triangle, then continue folding until the end of the pastry sheet. Use a little water to seal the edges.
- Heat vegetable oil in a deep skillet or pot over medium-high heat. Fry the samosas in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
- Serve the Leribe Beef and Potato Samosas hot with your favorite dipping sauce or chutney.
