Ingredients
- 3 lbs leg of lamb
- 4 cloves garlic, sliced
- 2 tbsp olive oil

Instructions
- Preheat the oven to 350°F (175°C).
- Make small incisions all over the lamb and insert the sliced garlic into the incisions.
- In a small bowl, mix the olive oil, lemon juice, dried oregano, salt, and pepper.
- Rub the lamb with the olive oil mixture, ensuring it is evenly coated.
- Place the lamb on a roasting rack in a roasting pan.
- Roast the lamb in the preheated oven for 3 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Let the lamb rest for 15 minutes before carving and serving.
