Ingredients

  • 3 lbs leg of lamb
  • 4 cloves garlic, sliced

  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Make small incisions all over the lamb and insert the sliced garlic into the incisions.
  3. In a small bowl, mix the olive oil, lemon juice, dried oregano, salt, and pepper.
  4. Rub the lamb with the olive oil mixture, ensuring it is evenly coated.
  5. Place the lamb on a roasting rack in a roasting pan.
  6. Roast the lamb in the preheated oven for 3 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  7. Let the lamb rest for 15 minutes before carving and serving.
