Lesotho-style Grilled Trout

Ingredients

  • 4 whole trout, cleaned and gutted
  • 1/4 cup olive oil
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 lemon, sliced

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix the olive oil, coriander, cumin, paprika, salt, and pepper to create a marinade.
  3. Rub the marinade all over the trout, including inside the cavity.
  4. Place a slice of lemon inside each trout.
  5. Grill the trout for about 6-7 minutes on each side, or until the flesh is opaque and easily flakes with a fork.
  6. Remove from the grill and let it rest for a few minutes before serving.
