Lesotho-style Grilled Trout

Ingredients
- 4 whole trout, cleaned and gutted
- 1/4 cup olive oil
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lemon, sliced
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix the olive oil, coriander, cumin, paprika, salt, and pepper to create a marinade.
- Rub the marinade all over the trout, including inside the cavity.
- Place a slice of lemon inside each trout.
- Grill the trout for about 6-7 minutes on each side, or until the flesh is opaque and easily flakes with a fork.
- Remove from the grill and let it rest for a few minutes before serving.
