Ingredients
- 1.5 kg lamb, cut into chunks
- 2 onions, chopped
- 4 garlic cloves, minced
- 2 cups dried red beans, soaked overnight
- 2 tomatoes, chopped
- 2 tbsp tomato paste
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 4 cups beef or vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the chopped onions and minced garlic, and sauté until the onions are soft.
- Add the soaked red beans, chopped tomatoes, tomato paste, ground cumin, ground coriander, paprika, and cayenne pepper. Stir to combine.
- Pour in the broth and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the lamb is tender and the beans are cooked through.
