Lesotho-style Lamb And Bean Casserole

Ingredients

  • 1.5 kg lamb, cut into chunks
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 cups dried red beans, soaked overnight
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 4 cups beef or vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the lamb chunks over medium heat.
  2. Add the chopped onions and minced garlic, and sauté until the onions are soft.
  3. Add the soaked red beans, chopped tomatoes, tomato paste, ground cumin, ground coriander, paprika, and cayenne pepper. Stir to combine.
  4. Pour in the broth and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the lamb is tender and the beans are cooked through.
