Lesotho-style Lamb And Chickpea Tagine

Ingredients
- 1.5 lbs lamb, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- In a large tagine or Dutch oven, heat some oil over medium-high heat.
- Add the lamb chunks and brown on all sides, then remove from the pot and set aside.
- Reduce the heat to medium and add the chopped onion to the pot. Cook until softened, then add the minced garlic and cook for another minute.
- Stir in the ground cumin, coriander, cinnamon, turmeric, and cayenne pepper, and cook for a few minutes until fragrant.
- Return the browned lamb to the pot, then add the chickpeas, diced tomatoes, and chicken broth. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the lamb is tender.
- Before serving, sprinkle the chopped cilantro over the tagine.
