Lesotho-style Lamb And Lentil Stew

Ingredients

  • 1 lb lamb, cut into chunks
  • 1 cup green or brown lentils, rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 tomatoes, chopped
  • 4 cups beef or vegetable broth
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions

  1. In a large pot, brown the lamb over medium heat until it's no longer pink. Remove the lamb from the pot and set it aside.
  2. Add the onion and garlic to the pot and sauté until they are soft and fragrant.
  3. Stir in the carrots, tomatoes, lentils, broth, cumin, coriander, turmeric, salt, and pepper.
  4. Return the lamb to the pot and bring the stew to a boil. Reduce the heat to low, cover, and simmer for about 2 hours, or until the lamb is tender and the lentils are cooked through.
  5. Adjust the seasoning if needed and serve the stew hot, garnished with fresh cilantro.
