Lesotho-style Lamb And Lentil Stew

Ingredients
- 1 lb lamb, cut into chunks
- 1 cup green or brown lentils, rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 tomatoes, chopped
- 4 cups beef or vegetable broth
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, brown the lamb over medium heat until it's no longer pink. Remove the lamb from the pot and set it aside.
- Add the onion and garlic to the pot and sauté until they are soft and fragrant.
- Stir in the carrots, tomatoes, lentils, broth, cumin, coriander, turmeric, salt, and pepper.
- Return the lamb to the pot and bring the stew to a boil. Reduce the heat to low, cover, and simmer for about 2 hours, or until the lamb is tender and the lentils are cooked through.
- Adjust the seasoning if needed and serve the stew hot, garnished with fresh cilantro.
