Lesotho-style Lamb And Pumpkin Curry

Ingredients
- 500g boneless lamb, cut into cubes
- 2 cups diced pumpkin
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1/2 tsp chili powder
- 1/2 tsp ground cinnamon
- 2 cups vegetable or chicken broth
- 2 tbsp cooking oil
- Salt and pepper to taste
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is soft and translucent.
- Add the lamb cubes to the pot and cook until browned on all sides.
- Stir in the ground cumin, coriander, turmeric, chili powder, and cinnamon, and cook for 1-2 minutes to toast the spices.
- Add the diced pumpkin and chopped tomatoes to the pot, and pour in the broth. Season with salt and pepper, then bring the curry to a simmer.
- Cover the pot and let the curry simmer for 45-50 minutes, or until the lamb is tender and the pumpkin is cooked through.
- Once done, adjust the seasoning if needed, and serve the Lesotho-style Lamb and Pumpkin Curry hot with steamed rice or crusty bread.
