Lesotho-style Lamb And Pumpkin Curry

Ingredients

  • 500g boneless lamb, cut into cubes
  • 2 cups diced pumpkin
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp chili powder
  • 1/2 tsp ground cinnamon
  • 2 cups vegetable or chicken broth
  • 2 tbsp cooking oil
  • Salt and pepper to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is soft and translucent.
  2. Add the lamb cubes to the pot and cook until browned on all sides.
  3. Stir in the ground cumin, coriander, turmeric, chili powder, and cinnamon, and cook for 1-2 minutes to toast the spices.
  4. Add the diced pumpkin and chopped tomatoes to the pot, and pour in the broth. Season with salt and pepper, then bring the curry to a simmer.
  5. Cover the pot and let the curry simmer for 45-50 minutes, or until the lamb is tender and the pumpkin is cooked through.
