Levivot (crispy Potato Latkes)
Levivot, also known as crispy potato latkes, are a traditional dish in Bukharan Jewish cuisine. These delicious potato pancakes are often enjoyed during Hanukkah and other special occasions.
Ingredients
- 4 large potatoes, grated
- 1 onion, grated
- 2 eggs
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
Instructions
- Place the grated potatoes and onions in a clean kitchen towel and squeeze out as much liquid as possible.
- In a large bowl, mix the squeezed potatoes and onions with eggs, flour, salt, and black pepper.
- Heat the vegetable oil in a large skillet over medium heat.
- Scoop the potato mixture into the hot oil, flattening each scoop with a spatula to form a pancake shape.
- Fry the levivot for 3-4 minutes on each side, or until golden and crispy.
- Transfer the cooked levivot to a paper towel-lined plate to drain excess oil.
- Serve the levivot hot with applesauce or sour cream.
