Ingredients

  • 4 large potatoes, grated
  • 1 onion, grated
  • 2 eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Place the grated potatoes and onions in a clean kitchen towel and squeeze out as much liquid as possible.
  2. In a large bowl, mix the squeezed potatoes and onions with eggs, flour, salt, and black pepper.
  3. Heat the vegetable oil in a large skillet over medium heat.
  4. Scoop the potato mixture into the hot oil, flattening each scoop with a spatula to form a pancake shape.
  5. Fry the levivot for 3-4 minutes on each side, or until golden and crispy.
  6. Transfer the cooked levivot to a paper towel-lined plate to drain excess oil.
  7. Serve the levivot hot with applesauce or sour cream.
