Ingredients

  • 1 whole chicken, cut into pieces
  • 200g chestnuts, peeled
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 cups chicken broth
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a wok over medium heat. Add ginger, garlic, and green onions. Stir-fry until fragrant.
  2. Add chicken pieces and chestnuts. Stir-fry for 5 minutes.
  3. Pour in soy sauce, oyster sauce, Shaoxing wine, sugar, salt, and white pepper. Stir to combine.
  4. Pour in chicken broth. Cover and simmer for 45 minutes, or until chicken is tender.
  5. Uncover and continue to simmer until the sauce thickens.
  6. Transfer to a serving dish and serve hot.

Tips & tricks

To easily peel chestnuts, make a small incision on the flat side of each chestnut and then boil them for a few minutes. The shells will then be easier to remove.
