Li Zi Ji (braised Chicken With Chestnuts)
Li Zi Ji, also known as Braised Chicken with Chestnuts, is a classic dish from Putian (Henghwa) Cuisine, known for its delicate flavors and emphasis on fresh ingredients.
Ingredients
- 1 whole chicken, cut into pieces
- 200g chestnuts, peeled
- 3 slices ginger
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp white pepper
- 2 cups chicken broth
- 2 tbsp vegetable oil
Instructions
- Heat vegetable oil in a wok over medium heat. Add ginger, garlic, and green onions. Stir-fry until fragrant.
- Add chicken pieces and chestnuts. Stir-fry for 5 minutes.
- Pour in soy sauce, oyster sauce, Shaoxing wine, sugar, salt, and white pepper. Stir to combine.
- Pour in chicken broth. Cover and simmer for 45 minutes, or until chicken is tender.
- Uncover and continue to simmer until the sauce thickens.
- Transfer to a serving dish and serve hot.

Tips & tricks
To easily peel chestnuts, make a small incision on the flat side of each chestnut and then boil them for a few minutes. The shells will then be easier to remove.
