Libyan Style Baked Fish (Samak Bil-Forn)

Ingredients

  • 1 whole fish (such as sea bass or snapper), cleaned and scaled
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 garlic cloves, minced
  • 1 lemon, sliced
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Make 3 diagonal cuts on each side of the fish.
  3. In a small bowl, mix the olive oil, cumin, paprika, coriander, turmeric, salt, pepper, and minced garlic to create a spice paste.
  4. Rub the spice paste all over the fish, including inside the cuts.
  5. Place the fish on a baking sheet lined with parchment paper.
  6. Place lemon slices inside the cuts and on top of the fish.
  7. Bake for 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.
  8. Garnish with fresh parsley before serving.
